This is Debbie Pendergast's famous tomato sauce.  It took some work to get it down on paper since it's a lot of "a little of this, a little of that" kind of thing.  However you do it, thought, this sauce is terrific.

====== Ingredients ======
  * 3 TBSP Olive Oil
  * 1 medium  Onion, minced
    * Sweat
  * Sprinkle Crushed Red Pepper
    * Bloom
  * 1 medium cloves Garlic, minced
    * Sweat 2 minutes
  * 1 tsp Oregano
  * 1 tsp Basil
  * 1/2 tsp Salt
  * Pepper (a few grinds)
  * 1 tsp Sugar (add more if sauce too acidic)
  * 2 x 28 oz cans Crushed Tomatoes
  * 1 x 15 oz  can Tomato Sauce
  * 1 x 6 oz can Tomato Paste
    * Add all, simmer
