{{ :recipes:blank_recipe_card.png?direct&200| }} ====== Easier Roast Turkey ====== /* Description */ **Why this recipe works:** We loosen the skin of the turkey and apply a mixture of salt and sugar to the meat to season it and help it retain more juices as it cooks. A baking powder rub ensures thorough browning and crispy skin. We preheat both a baking stone and a roasting pan in the oven before placing the turkey in the pan. The stone absorbs heat and delivers it through the pan to the turkey’s legs and thighs, which need to cook to a higher temperature than the delicate breast meat (which we protect with a foil shield). After the leg quarters have gotten a jump start on cooking, we reduce the oven temperature from 425 to 325 degrees and remove the shield to allow the breast to brown while the bird finishes cooking. The boost of heat provided by the stone also helps the juices brown and reduce into concentrated drippings that can be turned into a flavorful gravy in the time that the turkey rests. {(rater>id=100|name=Easier Roast Turkey|type=rate|headline=off)} |**Preheat:** °|**Yield:** servings|| |**Prep:** 0:00|**Wait:** 24-48 hours|**Cook:** 0:00| ====== Ingredients ====== * 4 TBSP Kosher Salt * 4 tsp Sugar * 1 tsp Baking Powder * 1.5 tsp Oil * 2 TBSP Oil ====== Directions ====== - Rub salt and sugar into meat, under the skin, breasts, legs and from the front and in the cavity - Tuck wings under - Let sit in fridge, uncovered 24-48 hours - Preheat baking stone with roast pan on top for 30 minutes at 500 degrees - Mix oil and baking powder, brush over skin - Cover breast meat with triangular sheet of foil - Add 2 TBSP oil to pan and place turkey into pan - Cook at 425 degrees for 45 minutes - Drop temp down to 325, remove shield, cook until breast registers 165 and the legs 175, about 90 minutes. - Let rest 45 minutes to an hour ====== Notes ====== - This recipe assumes a 10-12 lb turkey. /* Nutrition block - remove the slash-asterisk and asterisk-slash from just above and below the following block */ /* ====== Nutrition ====== |Calories (kcal): |Fat Calories (kcal): |Cholesterol (mg): |[[recipes:notes:nutrition guidelines |(Guide)]] | |Fat (g): |Saturated Fat (g): |Mono Fat (g): |Poly Fat (g): | |Protein (g): |Carbohydrates (g): |Sodium (mg): |Fiber (g): | */ {{tag>Recipes Holiday MainDish/Poultry AmericasTestKitchen}} /* Recipe Tags - Copy and paste tags from the list below to the tag list in the above line, replacing the "TagsNeeded" tag and separated by spaces. */ /* ---Recipe Types--- Appetizer Appetizer/Cold Appetizer/Hot Beverage Beverage/Cocktail Beverage/Liquor-Mixer Bread Bread/Biscuit-Roll Bread/Muffin Bread/Quickbread Bread/Yeast Breakfast Casserole Canning-Freezing Condiment Dessert Dessert/Bar-Brownie Dessert/Cake Dessert/Cake/Frosting Dessert/Candy-Chocolate Dessert/Crisp-Buckle Dessert/Cookie Dessert/Custard-Curd Dessert/IceCream-Ice Dessert/Pie Dessert/Pie/Crust Dessert/Topping Dip-Spread Entertaining Fondue Grilling-BBQ Grilling-BBQ/BBQSauce Holiday MainDish/Poultry AmericasTestKitchen Ingredient Ingredient/Seasoning-Rub Ingredient/Brine-Marinade Kid-Friendly MainDish MainDish/Beef MainDish/Poultry AmericasTestKitchen MainDish/Pork MainDish/Seafood MainDish/Vegetarian Pasta-Rice Pizza Roast Salad Salad/Dressing Sandwich Sauce-Gravy Sausage-Pate Side Side/Starch Side/Vegetable Snack Soup Soup/Stock-Broth Stew-Braise Stew-Braise/SlowCooker-Crockpot Stir-Fry Vegetarian ---Recipe Cuisines--- American American/Cajun-Creole American/Southern American/Southwestern Asian Asian/Chinese Asian/Indian Asian/Japanese Asian/Korean Asian/Thai Asian/Vietnamese European European/English European/French European/Greek European/Polish European/Italian European/Spanish Latin Latin/Brazilian Latin/Mexican MiddleEastern ---Recipe Sources--- AmericasTestKitchen AmericasTestKitchen/CooksCountry AmericasTestKitchen/CooksIllustrated BonAppetit Chowhound FineCooking FoodWine GoodEats Gourmet MilkStreet LMaidment TMaidment DMarcos JMarcos KMarcos JPhalen DPendergast ---Recipe Ratings--- 5★ 4★ 3★ 2★ 1★ No★ ---Recipe Alerts--- RecipeNeeded RecipeIncomplete RecipeWrong RecipeFails TagsNeeded */ ~~DISCUSSION~~
