  * 4 loaves Pita Bread- split, toasted, broken into pieces
    * Set aside
  * 4 Tomatoes, chopped
  * Salt- sprinkle on tomatoes 
    * Set aside
  * 1 Cucumber, peeled, seed chopped
  * 1 bunch scallions, white part only, sliced thin
  * 1 cup Whole Flat Parsely Leaves
  * 1/2 cup Basil Leaves
  * 1/2 cup Mint Leaves
  * 1 bunch Watercress, de-stemmed
    * Combine, set aside
  * 1/2- 3/4 cup Olive Oil
  * 1 Lemon- juiced
  * 1/8 tsp Cayenne Pepper
  * Pepper
    * Whisk together
    * Toss and serve.
