====== Browning Onions ====== * Cut up onions (4 or 5?) * 2 TBSP oil * 3/4 tsp Salt * 3/4 cup water * Add to non-stick pan * Bring to boil * Cover, cook for ~10 minutes, until most of the water is evaporated * Uncover, stir, scrape up fond, press against pan * Do this every 30 seconds until nicely browned, about 15-20 minutes * 1/8 tsp baking soda * 1 tsp water * Stir together * Add to pan, cook until evaporated * Done. {{tag>RecipeNotes Techniques}} /* Recipe Note Tags Books-Restaurants BuyingGuides Menus Misc Tips */ ~~DISCUSSION~~
