I make a boatload of it every Christmas and mail it to people. I didn't even used to like peanut brittle before this. The texture of this is not like the peanut brittle most people think of that is super hard and sticks to your t teeth for hours. It's crunchy in a way that is much more similar to butterfinger filling. {(rater>id=100|name=Peanut Brittle - Microwave|type=rate|headline=off)} |**Preheat:** °|**Yield:** servings|| |**Prep:** 0:15|**Wait:** 0:00|**Cook:** 0:15| ====== Ingredients ====== * 1 cups granulated sugar * 1/2 cup corn syrup * 1/4 tsp salt * 1.5 cups roasted salted peanuts * 1 tsp vanilla * 1 Tbsp butter * 1 tsp baking soda ====== Directions ====== - Use a fork to mix the sugar, corn syrup and salt in a large microwave safe bowl. The mixture will be thick and gooey and rough, it doesn’t need to be mixed super well. Set the fork aside because you will be using it again. - Microwave the mixture for 5 minutes on high. It will be a boiling liquid at this point. - Add the peanuts and mix. The sugar will very quickly start to seize up and become difficult to stir. Use the same fork from the first step and just mix it until it’s sticky and hardening and the peanuts are mostly coated. - Microwave the peanut mixture for 3 minutes. - Immediately remove the mixture from the microwave and add butter. Mix quickly until the butter melts. Then immediately add the vanilla and baking soda and mix well. - Pour the mixture onto a parchment lined cookie sheet. Optionally, lace another sheet of parchment on top and use a rolling pin or another cookie sheet to press the brittle into an even flat surface while still warm. - Allow to cool completely on the counter top, in the freezer, or outside if it’s cold enough. - Pick the cooled brittle up and drop it onto the counter from 6-10 inches to break it into classic irregular shapes.
