4 lg Onions (~3.5 lbs), sliced thin
1/4 + pinch Baking Soda
1 TBSP Kosher Salt
1 TBSP Brown Sugar
Combine in pot, mix, cover, let rest 10 minutes
1/4 cup olive oil
Saute over high heat until reduced by 75%, stirring often, and have turned a light gold
Reduce heat to medium, stirring for 15 minutes, until medium brown and bits stuck on bottom
1 TBSP Vinegar (amount?) (Sherry, Balsamic?)
1/4 cup Water (amount?)
Deglaze with some vinegar and water
Reduce heat to low, stirring until reduced to under a pint, and a dark golden brown
1 TBSP Vinegar (amount?)
Deglaze, stir a bit, remove. Should have about 1.5 cups
Assemble
1/2 cup onions
1.5 cups sour cream
3/4 cups mayonnaise
1/4 tsp garlic powder
1/4 tsp white pepper
Mix to combine.
