Poke 6 sets of fork holes in the potato skin
Mix 1/2 cup water with 2 TBSP salt
Dip potatoes in water and place on wire rack over sheet pan
Bake in oven at 450° until internal temp reaches 205°, 45 min to 1 hour
Take out of oven, brush with neutral oil (not butter!) and place back in oven for 10 minutes
Remove from oven, open potatoes immediately to let out steam
