Heat non-stick pan over med-high heat
Add, let foam subside
Pour in eggs, swirling constantly to form soft curds. Swipe edge to incorporate splashes
Once eggs start to set, spread out evenly over pan
Add cheese, sprinkling evenly over egg, leaving a small margin
Add other ingredients if desired
Press down into egg
Once set sufficiently, turn the third of the omelet away from you over the center
Remove from heat, slide out un-flipped third over the plate and flip the center over it with the pan
