Ingredients
5 medium red potatoes
1/4 cup mayonnaise
1/4 cup sour cream
2 tablespoons grated Parmesan cheese
1 1/2 tablespoons Dijon mustard
1 1/2 teaspoons cider vinegar
1/8 teaspoon cayenne pepper
This just adds flavor. To add kick, use up to 1/2 tsp.
1/4 teaspoon salt
1/2 teaspoon ground black pepper
1/4+ teaspoon paprika
1/2-2/3 bunch green onions, white parts sliced, green parts chopped
3 slices bacon, cooked and crumbled
2 hard boiled eggs, sliced
Directions
Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low, cover, and simmer until tender, about 20 minutes. Drain and cut into cubes.
Combine mayonnaise, Parmesan cheese, Dijon mustard, vinegar, cayenne pepper, salt, black pepper, and paprika in a large bowl. Add potatoes, eggs, bacon, and green onions; gently toss to combine.
Notes
Original recipe called for all mayo, but the sour cream lessens the mayo-ness and adds a bit of tang to offset the reduced cider vinegar.
