Mix coleslaw and onions—set aside. (If making ahead, I don’t add onions until mixing time because they tend to be overpowering.)
Mix oil, vinegar, sugar and flavor packet from noodles and microwave for 30 seconds. Set aside.
Crunch up ramen noodles and brown with almonds, sesame seeds and salt in sauté pan. Set aside. (Sauté ramen noodles and almonds in pan for about 3 minutes, stirring constantly, then add sesame seeds and salt until sesame seeds are brown)
Toss the coleslaw mix with dressing and then add the noodle mixture and mix thoroughly.
Prepare as close to serving time as possible. You don’t want to pre mix because the crunchy mixture will absorb the dressing.
