Accompaniment to Black Bean Soup w/Salsa but also great and fresh on its own.

• 1 Onion, finely chopped.
• 6-8 Large Tomatoes, diced.
• 2 Jalapenos, seeded and chopped.
• 1/2 cup Cilantro, chopped.
• 1/2 cup Mint, chopped.
• Juice of 1 Lime.
• 1 tbsp Salad Oil.
• Salt and Pepper to taste.

1. Combine ingredients and chill until ready to serve
