Ingredients
1 clove of garlic, pressed through a garlic press
1 tablespoon fresh lemon juice
1/2 a cucumber, seeded and finely minced (Use the other half for a salad.)
3/4 cup Greek yogurt
2 tablespoons minced fresh mint
1 tablespoon minced fresh flat leaf parsley
1/4 teaspoon kosher salt
Directions
Squeeze a tablespoon worth of lemon juice into a small bowl. This took half a lemon.
Add the garlic. Set aside a bit while you chop the herbs.
Add the herbs and yogurt.
Stir well, cover, and refrigerate until ready to use.
