AB's Onion Dip

Cook
- 4 lg Onions (~3.5 lbs), sliced thin
- 1/4 + pinch Baking Soda
- 1 TBSP Kosher Salt
- 1 TBSP Brown Sugar
- Combine in pot, mix, cover, let rest 10 minutes
- 1/4 cup olive oil
- Saute over high heat until reduced by 75%, stirring often, and have turned a light gold
- Reduce heat to medium, stirring for 15 minutes, until medium brown and bits stuck on bottom
- 1 TBSP Vinegar (amount?) (Sherry, Balsamic?)
- 1/4 cup Water (amount?)
- Deglaze with some vinegar and water
- Reduce heat to low, stirring until reduced to under a pint, and a dark golden brown
- 1 TBSP Vinegar (amount?)
- Deglaze, stir a bit, remove. Should have about 1.5 cups
Assemble
- 1/2 cup onions
- 1.5 cups sour cream
- 3/4 cups mayonnaise
- 1/4 tsp garlic powder
- 1/4 tsp white pepper
- Mix to combine.
- Better the next day
