AB's Onion Dip

Cook

  • 4 lg Onions (~3.5 lbs), sliced thin
  • 1/4 + pinch Baking Soda
  • 1 TBSP Kosher Salt
  • 1 TBSP Brown Sugar
    • Combine in pot, mix, cover, let rest 10 minutes
  • 1/4 cup olive oil
    • Saute over high heat until reduced by 75%, stirring often, and have turned a light gold
    • Reduce heat to medium, stirring for 15 minutes, until medium brown and bits stuck on bottom
  • 1 TBSP Vinegar (amount?) (Sherry, Balsamic?)
  • 1/4 cup Water (amount?)
    • Deglaze with some vinegar and water
    • Reduce heat to low, stirring until reduced to under a pint, and a dark golden brown
  • 1 TBSP Vinegar (amount?)
    • Deglaze, stir a bit, remove. Should have about 1.5 cups

Assemble

  • 1/2 cup onions
  • 1.5 cups sour cream
  • 3/4 cups mayonnaise
  • 1/4 tsp garlic powder
  • 1/4 tsp white pepper
    • Mix to combine.
    • Better the next day
