Apple Spice Cake

Ingredients
- 4 eggs
- 2 c. sugar
- 1 c. oil
- 2 tsp. vanilla
- 3 c. sifted flour
- 2 tsp. cinnamon
- 4 tsp. baking powder
- 6 medium apples, sliced very thin
- ½ c. nuts
Directions
- Beat the eggs. Add the sugar and oil and beat 1 minute. Add the vanilla. Sift together the flour, cinnamon and baking powder. Put into egg mixture and blend well. Fold in the very thinly sliced apples and nuts. Grease and flour an 11 ½ x 18 x 1 inch pan. Bake at 375 for 20 to 25 minutes. When cool, sprinkle confectioners sugar on top.
- Can use 1quart blueberries or 6 medium peaches
