Chinese Cole Slaw

Ingredients

  • 2 bags ready made coleslaw mix
  • 6 green onions
  • 1 small jar sesame seeds
  • 2 pkgs ramen noodles—oriental flavor
  • 1 bag slivered almonds
  • 3 tbsp vinegar
  • ¼ cup sugar
  • ½ cup oil
  • ½ tsp salt

Directions

  • Mix coleslaw and onions—set aside. (If making ahead, I don’t add onions until mixing time because they tend to be overpowering.)
  • Mix oil, vinegar, sugar and flavor packet from noodles and microwave for 30 seconds. Set aside.
  • Crunch up ramen noodles and brown with almonds, sesame seeds and salt in sauté pan. Set aside. (Sauté ramen noodles and almonds in pan for about 3 minutes, stirring constantly, then add sesame seeds and salt until sesame seeds are brown)
  • Toss the coleslaw mix with dressing and then add the noodle mixture and mix thoroughly.
  • Prepare as close to serving time as possible. You don’t want to pre mix because the crunchy mixture will absorb the dressing.
