Fried Rice w/Sausage

“I have never used a recipe for fried rice. Just heat up some oil or bacon fat in a frying pan, saute some meat and veggies, whatever you want (leftover beef, chicken, pork, salmon, hamburger, sausage, hotdogs…whatever), add some garlic, onion, soy sauce, sesame oil, salt, pepper, add the STALE rice (ie, leftover from previous night's dinner), then lastly frozen peas or corn, thawed, let simmer/steam until heated through, and serve.
I've also added mushrooms and occasional a scrambled egg, depending how much meat is already in the dish. It's so easy. ”

Ingredients

  • 3 cups cold, cooked rice
  • 2 to 3 eggs, beaten well
  • 1/4 teaspoon salt (optional)
  • 3 steamed Chinese sausages, cooled sliced
  • Salad oil
  • 2 Tablespoons soy sauce
  • 2 Tablespoons chopped green onions
  • Pepper
  • 1/8 teaspoon ground ginger
  • 1/8 teaspoon garlic powder
  • 1/2 cup frozen peas (more, if you like, or other vegetable)

Directions

  1. In a 12 inch skillet, heat 2 Tablespoons salad oil over high heat. Beat eggs with a fork, add salt, if desired, pour into pan and cook, stirring. Push to the side.
  2. Add 2 more Tablespoons oil and the rice, stirring until the rice is well coated with oil. Lower heat to medium.
  3. Add sausage slices and soy sauce. Sprinkle with pepper and ground ginger.
  4. Add peas (or other vegetable). Mix well, heat through, add scallions and serve.
