Million Island Dressing

Ingredients

  • 1 cup plain yogurt
  • 2 tablespoons vegetable oil
  • 2 tablespoons tomato sauce
  • 2 teaspoons lemon juice
  • 2 teaspoons mustard powder
  • 2 teaspoons sugar
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1/2 cup finely chopped onion
  • 1 tablespoon sweet relish
  • 1 tablespoon finely chopped green olives
  • 1 jalapeno, finely chopped

Directions

  1. In a bowl combine yogurt, vegetable oil, tomato sauce, lemon juice, mustard powder, sugar, salt, and pepper. Whisk together until blended.
  2. Add onion, sweet relish, olives, and jalapeno and whisk to combine evenly.
  3. Chill 1 hour.

Notes

  • Comment: This is a great recipe – it's a way to eat a salad with a creamy, heavy dressing, without feeling guilty about fat and calories. It is quite oniony as written. We cut the amount of onion in half, and it still overpowered the dressing – especially after it was allowed to sit for a few hours. I recommend using only a tablespoon or two of onion, or perhaps using scallion or shallot instead. Also, doubling the amount of tomato sauce makes it less “blond”, and (in my opinion) more like thousand island.
