Boning a Chicken

Wings
Breast up
Grab a wing, lift it off the board
Cut from back towards the front

Wishbone
Breast up
Knife in neck cavity, scrape flesh off the wishbone on both side
Wiggle two fingers in and dislocate the wishbone at the top and remove

Legs
Breast up
Cut along the depression between the leg and breast, all along the depression
Turn over
Grab legs with thumbs located where the leg joins the body. Bend back to disolocate the joint
Slice off the leg, including the 'oyster' just in front of the joint

Drumstick
Squeeze leg and thigh together, feel for joint opening
Slice once down into joint
Lay leg flat and finish cut

Breasts
Breast up
Slice down the keel (breast) bone
Gently pull the breast meat away from rips, using a knife to detach

Done!
