Penn Ave Minestrone

Ingredients

  • 1 lb Beef w/bone
  • 3 1/2 qts Water
  • 1 Tbsp Salt
  • 1/2 tsp Pepper
    • Simmer, covered for 1 hour. Skim off fat
    • Cook 3 hours more, remove meat
  • 4 tsp Oil
    • Heat in skillet
  • 1 clove Garlic
    • Saute until gold. Discard garlic, keeping oil
  • 1/2 cup Chopped Onion
  • 1/2 cup Chopped Parsley
    • Add to Oil, saute 5 minutes
  • 1 can Kidney Beans
  • 1 can Peas
  • 1 can Green Beans
  • 2 cups Shredded Cabbage
  • 1 sm can Canned Tomato Paste
    • Add, simmer covered 30 minutes
  • 6 oz Spaghetti, broken
    • Add, simmer 10 minutes
