Savory Fruit Compote

(I have no idea if the picture is accurate. Nothing out there that is tied to this recipe, and I was getting desperate.)

Good Eats - Whithering Bites

Ingredients

  • 4 cups water
  • 8 ounces dried apples, pears and apricots
  • 1 sm Onion, cut into rings
  • 1 tsp Garlic, minced
  • 2 oz Brown Sugar
  • 1 lemon, zested
  • 1/4 cup orange juice, freshly squeezed
  • 1/4 cup Apple Cider Vinegar
  • 1 cinnamon stick
  • 1 whole clove
  • 1 tsp Rosemary, ground

Directions

  1. In a medium saucepan, combine the water, fruit, onion, garlic, brown sugar, lemon zest, orange juice, and vinegar over medium heat. Once mixture comes to a boil, reduce the heat to medium-low and add the cinnamon and clove.
  2. Simmer 40 minutes, stirring occasionally, until the fruit has softened and the mixture has thickened. Remove from the heat and set aside to cool.
  3. Serve warm or cold.

Notes

  • Cook's Note: If using store bought dried fruit, chop the pieces into 1/2-inch chunks and simmer the mixture an additional 15 to 20 minutes.
