Warm Dijon Potato Salad

Ingredients

  • 5 medium red potatoes
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 2 tablespoons grated Parmesan cheese
  • 1 1/2 tablespoons Dijon mustard
  • 1 1/2 teaspoons cider vinegar
  • 1/8 teaspoon cayenne pepper
    • This just adds flavor. To add kick, use up to 1/2 tsp.
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1/4+ teaspoon paprika
  • 1/2-2/3 bunch green onions, white parts sliced, green parts chopped
  • 3 slices bacon, cooked and crumbled
  • 2 hard boiled eggs, sliced

Directions

  1. Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low, cover, and simmer until tender, about 20 minutes. Drain and cut into cubes.
  2. Combine mayonnaise, Parmesan cheese, Dijon mustard, vinegar, cayenne pepper, salt, black pepper, and paprika in a large bowl. Add potatoes, red onion, and green onions; gently toss to combine.

Notes

  1. Original recipe called for all mayo, but the sour cream lessens the mayo-ness and adds a bit of tang to offset the reduced cider vinegar.
