Whopper Burger

Ingredients

  • 1 lb 80/20 Ground Chuck
    • Portion into 1/4 lb balls, let come to room temperature
    • Shape into 1-1/2 thick patties
    • Press down in the middle
  • Burger Seasoning
    • 1-1/4 tsp Salt
    • 1 tsp Ground Black Pepper
    • 1/2 tsp Onion Powder
    • 1/2 tsp Garlic Powder
    • 1/2 tsp Smoked Paprika
    • 1/2 tsp Brown Sugar
    • Mix together
  • Mayonnaise
    • 1 Egg Yolk
    • 1/2 tsp Salt
    • 1/2 tsp Dijon Mustard
    • 1/2 tsp Sugar
    • 2 tsp Lemon Juice
    • 1 TBSP White Wine Vinegar
      • Mix
    • Neutral Oil
      • Drizzle very slowly into yolk mixture while stirring vigorously, at first
      • Once emulsion has formed, can increase oil
      • Add oil until text as desired, slightly runny since it's at room temp, ~8 oz
      • 1 clove Garlic, minced (optional)
      • Let sit on counter for 30 minutes
      • Refrigerate
  • Ketchup
    • 3 TBSP Ketchup
    • 1/8 tsp Chipotle Pepper Sauce
  • Veggies
    • Iceberg Lettuce, cut head in half, thinly shaved
    • Onion, same as tomatoe
    • Beefsteak Tomatoes, 1/4“ slices, salted both sides
    • Pickles
  • Sesame Seed Buns
    • Coat lightly on each half with Mayo
    • Brown in skillet

Directions

  1. Cook Burger
    1. Coat burger patty with seasoning
    2. Cook on high grill until moisture seen on top side of patty
    3. Coat top of patty with seasoning
    4. Flip patty
    5. Add a dash of Worcestershire
    6. Add cheese (optional)
    7. Cook for 1-1/2 minutes
  2. Assembly
    1. Bun, Mayo, Patty, Pickles, Ketchup, Onions, Tomato, Lettuce, Bun
