Best Baked Potatoes

Ingredients

Potatoes

  • Russet Potatoes, med-large
  • Salt
  • Oil

Goat Cheese Topping

  • 4 oz Goat Cheese
  • 2 TBSP Extra Virgin Olive Oil
  • 2 TBSP Chopped Parsley
  • 1 TBSP Diced Shallot
  • 1/2 tsp Lemon Zest
  • S & P to taste

Directions

Potatoes

  1. Poke 6 sets of fork holes in the potato skin
  2. Mix 1/2 cup water with 2 TBSP salt
  3. Dip potatoes in water and place on wire rack over sheet pan
  4. Bake in oven at 450° until internal temp reaches 205°, 45 min to 1 hour
  5. Take out of oven, brush with neutral oil (not butter!) and place back in oven for 10 minutes
  6. Remove from oven, open potatoes immediately to let out steam

Goat Cheese Topping

  1. Mix all ingredients together, season with salt and pepper to taste
