Ingredients
Potatoes
- Russet Potatoes, med-large
- Salt
- Oil
Goat Cheese Topping
- 4 oz Goat Cheese
- 2 TBSP Extra Virgin Olive Oil
- 2 TBSP Chopped Parsley
- 1 TBSP Diced Shallot
- 1/2 tsp Lemon Zest
- S & P to taste
Directions
Potatoes
- Poke 6 sets of fork holes in the potato skin
- Mix 1/2 cup water with 2 TBSP salt
- Dip potatoes in water and place on wire rack over sheet pan
- Bake in oven at 450° until internal temp reaches 205°, 45 min to 1 hour
- Take out of oven, brush with neutral oil (not butter!) and place back in oven for 10 minutes
- Remove from oven, open potatoes immediately to let out steam
Goat Cheese Topping
- Mix all ingredients together, season with salt and pepper to taste
