Costco Chicken Stock

Ingredients

  • 1 Costco Rotisserie Chicken
  • 1/2 Onion, sliced thin
  • 1/2 Carrot, sliced thin
  • 2 Cloves Garlic, smashed
  • 2 Qts Water, boiling
  • 1 TBSP Oil

Directions

  1. In an instant pot, sweat and slightly brown onion, carrot, and garlic
  2. In a medium stainless steel bowl, completely disassemble chicken and shred meat
  3. Add meat and water to instant pot and set for 40 minutes
  4. Let instant pot cool down or carefully release the pressure slowly
  5. Strain out solids and you have stock

For Consomme:

  1. Pour stock and some raw chicken in a blender and blend at high speed
  2. Pour into instant pot, bring to high heat, and then let cool
  3. Strain in sieve and squeeze out liquid from solids

For demi-glace:

  1. Freeze stock into ice cubes
  2. After freezing, thaw the cubes in a coffee strainer in the refrigerator
  3. You're left with almost a demi-glace

Notes

  1. Also works for other meats. Set instant pot for between 1-2 hours.
