Costco Chicken Stock

Ingredients
- 1 Costco Rotisserie Chicken
- 1/2 Onion, sliced thin
- 1/2 Carrot, sliced thin
- 2 Cloves Garlic, smashed
- 2 Qts Water, boiling
- 1 TBSP Oil
Directions
- In an instant pot, sweat and slightly brown onion, carrot, and garlic
- In a medium stainless steel bowl, completely disassemble chicken and shred meat
- Add meat and water to instant pot and set for 40 minutes
- Let instant pot cool down or carefully release the pressure slowly
- Strain out solids and you have stock
For Consomme:
- Pour stock and some raw chicken in a blender and blend at high speed
- Pour into instant pot, bring to high heat, and then let cool
- Strain in sieve and squeeze out liquid from solids
For demi-glace:
- Freeze stock into ice cubes
- After freezing, thaw the cubes in a coffee strainer in the refrigerator
- You're left with almost a demi-glace
Notes
- Also works for other meats. Set instant pot for between 1-2 hours.
