Italian Bread Salad

Ingredients
- 1/2 cup Red Wine Vinegar
- Use 1/3 cup
- 1/2 tsp Salt
- 1/8 tsp Ground Pepper
- 1 cup Extra-Virgin Olive Oil
- 4 Large Ripe Tomatoes, seeded and diced

- 1 cup Shredded or Coarsely Chopped Fresh Basil Leaves
- 1 lb Day-Old Italian Bread, cut into 1/2“ slices
- 1/4 cup Garlic Oil
- 1 Large Cucumber, seeded and thinly sliced

- 1 Large Red Onion, peeled and thinly sliced

Garlic Oil
- 1/4 cup Extra-Virgin Olive Oil
- 4 cloves Garlic, peeled and crushed with back of knife
- Combine and let stand 2 hours
Directions
- Combine vinegar, salt, pepper, and olive oil. Stir in tomatoes and basil. Set aside
- Toast bread on hot grill (or toaster or broiler) until both sides are golden brown. Brush one side of each slice with garlic oil and set aside, uncovered, to cool to room temperature.
- Tear the bread into pieces ~3/4” square.
- Toss bread, cucumbers, and onion with the tomato mixture. Cover with plastic wrap and marinate at room temperature for at least 20 minutes, or as long as 4 hours. Bread will soften as it absorbs flavors in the salad.
Notes
- Add more tomatoes and cucumbers, or other complimentary vegetables.
