This is Debbie Pendergast's famous tomato sauce. It took some work to get it down on paper since it's a lot of “a little of this, a little of that” kind of thing. However you do it, thought, this sauce is terrific.

• 3 TBSP Olive Oil
• 1 medium Onion, minced
  • Sweat
• Sprinkle Crushed Red Pepper
  • Bloom
• 1 medium cloves Garlic, minced
  • Sweat 2 minutes
• 1 tsp Oregano
• 1 tsp Basil
• 1/2 tsp Salt
• Pepper (a few grinds)
• 1 tsp Sugar (add more if sauce too acidic)
• 2 x 28 oz cans Crushed Tomatoes
• 1 x 15 oz can Tomato Sauce
• 1 x 6 oz can Tomato Paste
  • Add all, simmer
