Warm Dijon Potato Salad
Adapted from AllRecipes.com. Seriously good potato salad. May become the Ivy Road house potato salad.

Ingredients
- 5 medium red potatoes
- 1/4 cup mayonnaise
- 1/4 cup sour cream
- 2 tablespoons grated Parmesan cheese
- 1 1/2 tablespoons Dijon mustard
- 1 1/2 teaspoons cider vinegar
- 1/8 teaspoon cayenne pepper
- This just adds flavor. To add kick, use up to 1/2 tsp.
- 1/4 teaspoon salt
- 1/2 teaspoon ground black pepper
- 1/4+ teaspoon paprika
- 1/2-2/3 bunch green onions, white parts sliced, green parts chopped
- 3 slices bacon, cooked and crumbled (optional)
- 2 hard boiled eggs, sliced (optional)
Directions
- Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low, cover, and simmer until tender, about 20 minutes. Drain and cut into cubes.
- Combine mayonnaise, Parmesan cheese, Dijon mustard, vinegar, cayenne pepper, salt, black pepper, and paprika in a large bowl. Add potatoes, red onion, and green onions; gently toss to combine.
Notes
- Original recipe called for all mayo, but the sour cream lessens the mayo-ness and adds a bit of tang to offset the reduced cider vinegar.
- Add bacon and/or eggs to make it a heartier salad.
