Amaretto Chocolate Mousse
Another recipe from Jennivine's that's delicious and not too chocolate-heavy.

Ingredients
- 4 oz. Semi-Sweet Chocolate
- Melt in double-boiler with some cream from below
- 6 Egg Yolks
- 2 TBSP Amaretto
- Make a Sabayon w/some sugar from below
- Set aside
- 6 Egg Whites
- Beat slightly
- 1/2 cup Sugar (less used above)
- Add gradually, beat until stiff
- Set aside
- 2 cups Whipping Cream (less used above)
- Beat stiff
- Fold together gently, with minimum stirring
- Place into individual glasses
- Refrigerate 2 hours
Notes
* Can be served straight or with some whipped cream and/or chocolate shavings. Kind of seems like gilding the lily, but, you know, presentation.
