Deb's Super Meatballs

Ingredients

  • 1 cup torn pieces of white bread - packed (~1 1/2 slices)
  • 3/4 cup milk
  • 1 lb ground beef (92%)
  • 2/3 lb ground pork
  • 1/4 tsp Salt
  • 1/4 tsp Pepper
  • 2 cloves garlic, grated or minced
  • 1/2 cup grated Pecorino Romano Cheese
  • 1 egg
  • 2 heaping tsp dried parsley (2 TBSP fresh)
  • 2 Tbsp extra virgin olive oil

Directions

  1. In a small bowl, soak bread in milk to soften.
  2. Place meats in mixing bowl and season with salt & pepper. Add garlic, cheese, bread with milk, egg, parsley & olive oil. Mix well to combine.
  3. Form into balls and place on a rimmed baking sheet lined with parchment paper.
  4. Bake at 400° for 25-30 min. (Time will vary depending on the size of the meatballs.)
