Fish in Paper w/Honey
When I worked in Belgium, I took a cooking class in Arles, France. One day, we went to the local market and I asked honey seller how to grill Salmon glazed with honey (I'd had this the week before in Brussels). She told me that the honey would burn, but she gave me a recipe for Poisson en Papillote, or fish in paper. This is better.

Ingredients
- 4-6 oz Fish Filet
- 1-2 slices Lemon
- 1 TBSP Creme Fraiche
- 1 TBSP Fennel Seed
- 1 TBSP Olive Oil
- 1 tsp Honey
- S&P
- Wrap in paper or seal in an aluminum foil packet
- Bake 15-20 minutes at 350
Notes
- I've mostly used salmon in this dish, although any would be good.
- The honey seller suggested acacia or lavender honey would be best, but plain honey is fine.
