Jennivine's Tomato-Basil Sauce

This sauce was designed for the Jennivine's Goat Cheese In Phyllo Bags recipe from Jennivine Restaurant. It's a bit of work, but well worth it.

Ingredients

  • 10 Tomatoes, peeled (howto), seeded, finely chopped
  • 1 Onion, finely chopped
  • 2 cloves Garlic, pressed
  • Olive Oil
  • 2 Bay Leaves
  • 2-3 tbsp minced Fresh Basil
  • 1/2+ cup White Wine

Directions

  1. Peel, seed and finely chop tomatoes
  2. Saute onion in olive oil, add garlic and bloom
  3. Add tomatoes, bay leaves, basil and wine; stew for an hour
