This recipe came from Original Joe's in San Francisco via the Chicago Tribune.

• 1 lb 92% Ground Beef
• 1/4 cup Olive Oil
• 1 Onion, chopped
• 1/4 tsp Oregano
• S&P
  • Simmer of medium heat until onions translucent
• 10 oz chopped, wilted Spinach
• 3 Eggs, beaten
  • Add, saute until eggs just cooked
• grated Parmesan Cheese

Serve over/next to buns with cheese

• If using frozen spinach, make sure to wring out as much water as possible
• It's technically just an egg scramble, but I sometimes treat it like sloppy joes.
