Joe's Specials

Ingredients
- 1 lb 92% Ground Beef
- 1/4 cup Olive Oil
- 1 Onion, chopped
- 1/4 tsp Oregano
- S&P
- Simmer of medium heat until onions translucent
- 10 oz chopped, wilted Spinach
- 3 Eggs, beaten
- Add, saute until eggs just cooked
- grated Parmesan Cheese
Serve over/next to buns with cheese
Notes
- If using frozen spinach, make sure to wring out as much water as possible
- It's technically just an egg scramble, but I sometimes treat it like sloppy joes.
