Browning Onions

  • Cut up onions (4 or 5?)
  • 2 TBSP oil
  • 3/4 tsp Salt
  • 3/4 cup water
    • Add to non-stick pan
    • Bring to boil
    • Cover, cook for ~10 minutes, until most of the water is evaporated
    • Uncover, stir, scrape up fond, press against pan
    • Do this every 30 seconds until nicely browned, about 15-20 minutes
  • 1/8 tsp baking soda
  • 1 tsp water
    • Stir together
    • Add to pan, cook until evaporated
    • Done.
