Oxtail Soup

I would always look forward to this soup. Good meat, good broth, funny name. I remember one time that I came home to Minneapolis from Chicago unexpectedly and Mom had dropped the just-started dinner prep to make this in time for my arrival. Amazing, considering that in our house, if you didn't like what's for dinner, dinner is over. Love.

Ingredients

  • 1 lb Oxtails
    • Roll in Flour, brown in Oil
  • 3 1/2 qts Water
  • 1 TBSP Salt
  • 1/8 tsp Pepper
  • 1 cup sliced Onions
  • 1 lb can Diced Tomatoes + juice
  • 2 TBSP Worcestershire Sauce
  • 1 TBSP Sugar
  • 2 tsp Celery Salt
  • 3 Cloves
  • 2 Bay Leaves
    • Add, simmer 2 hours
  • 4-5 Carrots, sliced
  • 1 lb can Green Beans
  • 4 medium Potatoes, diced
  • 1/3 cup Barley, optional
    • Add, cook 1 hour more

Notes

The oxtails were used because they were cheap and had marrow. Anything with meat and marrow will do.

This didn't turn out as good as I remember. I wonder if it's past its time. I'll need to look for an updated oxtail soup recipe.
