Penn Ave Minestrone

Ingredients
- 1 lb Beef w/bone
- 3 1/2 qts Water
- 1 Tbsp Salt
- 1/2 tsp Pepper
- Simmer, covered for 1 hour. Skim off fat
- Cook 3 hours more, remove meat
- 4 tsp Oil
- Heat in skillet
- 1 clove Garlic
- Saute until gold. Discard garlic, keeping oil
- 1/2 cup Chopped Onion
- 1/2 cup Chopped Parsley
- Add to Oil, saute 5 minutes
- 1 can Kidney Beans
- 1 can Peas
- 1 can Green Beans
- 2 cups Shredded Cabbage
- 1 sm can Canned Tomato Paste
- Add, simmer covered 30 minutes
- 6 oz Spaghetti, broken
- Add, simmer 10 minutes
