Roast Leg Of Lamb

I met Marissa (Marissa with an i as in “it”) and Jeremy Pagden at the Jennivine's cooking class I took in Dallas. The class and I wound up having several dinner parties after the class was over and Marissa and Jeremy hosted the first, which included roasted leg of lamb. One of the things that struck me was that they liked to watch the news at night and cook dinner together, which I think is a good way to go through life. Anyway, Jeremy was from South Africa and he didn't believe in doctoring up lamb very much, and I couldn't complain since the results were delicious.

Prep: 0:10Wait: 0:20Cook: 1:45

Ingredients

  • 4 lb Leg of Lamb
  • 2 cloves Garlic, cut into quarters
  • Butter
  • Rosemary
  • Thyme

Directions

  1. Cut 8 holes in lamb, stuff with garlic pieces
  2. Rub butter over lamb
  3. Sprinkle on herbs
  4. Bake @360 for 1:45
