Better Than Iggy's Sundried Tomato Spread
This started out as an attempt to equal Iggy's Sundried Tomato Spread, but it wound up being better.

Ingredients
- 1 8.2 oz jar Trader Joe's Julienned Sun-Dried Tomatoes in Oil
- 3 oz can Tomato Paste
- Olive Oil
- 2 tablespoons fresh Basil (2 tsp dried)
- 1 teaspoon minced Garlic
- pinch of Salt
- Black Pepper
- pinch Crushed Red Pepper
- 1/4 cup grated Parmesan Cheese
- 1 6oz container Trader Joe's Crumbled Feta
- 1/2 teaspoon Sugar (optional)
Directions
- Pour off the oil and add additional olive oil to make 1/4 cup.
- Put all ingredients in a food processor and pulse until as chunky as desired. Let chill covered in the refrigerator.
Notes
- Also good if you want to add some parmesano romano and/or ricotta cheese.
- Pulse in spurts, so keep it as “chunky” or as smooth as i want. another option is to reserve a few of the sundrieds and add them in at the end with just a couple of whirls to keep in some nice chunks. i also would add the capers in at that same point, so that they stay mostly whole.
