Strawberry Glace Pie

This is my favorite strawberry pie, courtesy of Mom and my godmother, Janet Preus.

Ingredients

  • Bake and cool 9“ pie shell
  • 1 10oz pkg Frozen Strawberries
  • 5-6 Fresh Strawberries
  • 1/4 cup Water
    • Simmer for 3-4 minutes
  • 3 1/2 Tbsp Cornstarch, sifted
  • 1 cup Sugar
  • Add to simmered fruit
  • Cook until syrup is thick clear, stirring constantly
  • 1 tsp Lemon Juice
    • Add, cool slightly
  • 3 cups (or 3 pints) Fresh Strawberries
  • Whipping Cream, sweetened

Directions

  1. Line baked pastry shell
  2. Pour simmered fruit over pie
  3. Chill thoroughly, uncovered
  4. Decorate with sweetened whipped cream
  5. Serve immediately

Notes

For 1 Qt strawberries:

  • 2 cups Fresh Strawberries
  • 3/4 cup Sugar
  • 3 Tbsp Cornstarch
  • 1/4 cup Water
  • Cook until thick and clear
