Tzatziki Sauce

Ingredients

  • 1 clove of garlic, pressed through a garlic press
  • 1 tablespoon fresh lemon juice
  • 1/2 a cucumber, seeded and finely minced (Use the other half for a salad.)
  • 3/4 cup Greek yogurt
  • 2 tablespoons minced fresh mint
  • 1 tablespoon minced fresh flat leaf parsley
  • 1/4 teaspoon kosher salt

Directions

  1. Squeeze a tablespoon worth of lemon juice into a small bowl. This took half a lemon.
  2. Add the garlic. Set aside a bit while you chop the herbs.
  3. Add the herbs and yogurt.
  4. Stir well, cover, and refrigerate until ready to use.
