Tzatziki Sauce

Ingredients
- 1 clove of garlic, pressed through a garlic press
- 1 tablespoon fresh lemon juice
- 1/2 a cucumber, seeded and finely minced (Use the other half for a salad.)
- 3/4 cup Greek yogurt
- 2 tablespoons minced fresh mint
- 1 tablespoon minced fresh flat leaf parsley
- 1/4 teaspoon kosher salt
Directions
- Squeeze a tablespoon worth of lemon juice into a small bowl. This took half a lemon.
- Add the garlic. Set aside a bit while you chop the herbs.
- Add the herbs and yogurt.
- Stir well, cover, and refrigerate until ready to use.
