Foiled Scalloped Potatoes
My friend Jon E Johnson was over this past weekend and he made this for our dinner Saturday night. So simple and easy, and it cooks on the grill while the rest of the meal is being cooked!

Ingredients
- 1.25 lbs Potatoes (Yellow or Red)
- Olive Oil
- 3 TBSP Butter, sliced into pats
- Herbs, any kind (optional)
- Salt
- Pepper
Directions
- Scallop the potatoes fairly thinly
- Prepare 24“ long piece of aluminum foil by brushing the center 5” with olive oil so the potatoes don't stick to the bottom
- Overlap the potatoes in 2 lines along the center of the foil
- Place pats of butter on top of the potatoes and season with salt and pepper
- Add any extras that you want:
- Herbs
- Spices
- Cayenne
- Fold the foil over length-wise and roll the seam to seal in the steam
- Place on grill over med-low heat. Move to upper rack if the potatoes are cooking too fast
